Whole30 on the Road

I’m not a big diet person. I’m definitely more about moderation. But as amazing as our lake quarantine time was, we found ourselves packing a cooler of beer everyday, snacking on chips and dips, AND eating dessert literally every night. I didn’t think it was possible but Parker has an even bigger sweet tooth than I do!

So we needed a reset and Whole30 sounded like the best option. Whole30 is a little intimidating just in general let alone planning meals for the van so we put together a list of our favorite finds and go-to meals but definitely check out the guidelines on the Whole30 website before you get started!

Breakfast

Coffee/unsweetened cold brew + unsweetened coconut almond milk or nutpods creamer

Huevos Rancheros (egg + salsa + quac)

Acai Bowl + almond butter + coconut + cacao + fresh berries + banana + chia seeds

Eggs & whole30 approved bacon + berries

Salmon Benny

Steak & Eggs + berries
